They are currently in soft-opening mode. Owned by executive chef <strong>Paolo Gavazza<\/strong> and sommelier <strong>Giuseppe Cagnoni<\/strong>, it is a traditional and authentic Italian restaurant featuring dry aged, locally sourced NC meats and fish and the very best wines found locally and worldwide. <strong>Gavazza<\/strong> is an alumnus of <strong>Alma<\/strong>, one of the most prestigious culinary schools in Italy and worked for a Michelin Star Restaurant in Rome. <strong>Cagnoni<\/strong> has 20 years of restaurant experience including owning restaurants in Miami and San Francisco. <a target=\"_blank\" href=\"https:\/\/convivio.wine\/\" rel=\"noreferrer noopener\">Get to know them here<\/a>. <\/li><\/ul>\n\n\n\n<p class=\"has-text-color has-vivid-red-color\"><strong>Wake County Restaurant News<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>This is it. Who is ready for the opening of <strong>Andrew Ullom\u2019s Union Special Bread<\/strong> retail location in the redeveloped <strong>Gateway Plaza<\/strong> off Crabtree Boulevard? This is opening weekend! How good will it be? Let\u2019s put it this way, his closing time isn\u2019t a set hour. His closing time is \u201csold out.\u201d In other words, they will be open as long as the goodness is around. In further words, get there EARLY! On Saturday, check-in around noon to see what is available for the 2 p.m. blow out. And Sunday morning, the madness begins at 8 a.m. until&#8230;well, you know, everything is gone! Bread, pastry, cookies, <strong>Counter Culture Coffee<\/strong> on the drip and <strong>Slingshot Coffee<\/strong> on the keg. <a rel=\"noreferrer noopener\" href=\"https:\/\/www.facebook.com\/unionspecialbread\" target=\"_blank\">Their Facebook page is likely the best way to keep up<\/a>.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Got word this week that following the recent openings of <strong>O-Ku Sushi<\/strong> and <strong>Oak Steakhouse<\/strong> in downtown Raleigh, <strong>The Indigo Road Hospitality Group<\/strong> is excited to announce continued expansion in the Triangle with its Italian concept <strong>Colletta<\/strong>. It is expected to open in 2021 at <strong>Fenton<\/strong> in Cary and will be the second location with the original location north of Atlanta in Alpharetta, Georgia. Drawing influence largely from Northern Italy, <strong>Colletta Cary\u2019s<\/strong> cuisine will put a twist on treasured classics while introducing modern culinary techniques with the changing seasons. Menu highlights will include housemade pastas, wood-fired pizzas, cheeses and other hand-crafted ingredients. It is the latest restaurant to call <strong>Fenton<\/strong> home, joining <strong>Ford Fry\u2019s<\/strong> popular Tex-Mex concept <strong>Superica<\/strong> and <strong>Scott Crawford\u2019s<\/strong> newest steakhouse <strong>Crawford Brothers<\/strong>. <a rel=\"noreferrer noopener\" href=\"https:\/\/www.collettarestaurant.com\/\" target=\"_blank\">Get familiar with them here<\/a>.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>The summer pop-up fun continues through the summer where you can get a sneak preview of <strong>k\u014d*\u00e4n<\/strong> at their sister restaurant <strong>so*ca<\/strong> in <strong>Cameron Village<\/strong>! <a rel=\"noreferrer noopener\" target=\"_blank\" href=\"https:\/\/www.instagram.com\/koan_cary\/\">Follow them on Instagram here<\/a>.<\/li><\/ul>\n\n\n\n<p class=\"has-text-color has-vivid-red-color\"><strong>Durham, Orange &amp; Chatham Restaurant News<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>In Chapel Hill, got word from the <strong>Burgeoningbaker<\/strong> (Twitter) that a concept called <strong>Hawkers<\/strong>, featuring Asian street fare, is coming to <strong>University Place<\/strong>. The owners were inspired by their travels to Asia and memories of growing up, craving the unapologetic flavors of true Asian food-dumplings with bounce, spicy curries, crisp pork belly, etc. When in Asia, they knew the best dishes were on the streets from hawker stalls, thus the name. This is the second North Carolina location and the first in the Triangle (other NC location is in Charlotte). <a rel=\"noreferrer noopener\" href=\"https:\/\/eathawkers.com\/\" target=\"_blank\">Get familiar with the Orlando concept here<\/a>.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>And one final note from Chapel Hill, if you\u2019ve ever dreamed of owning your own burger joint, we learned from <strong>Neal DePersia<\/strong> at <strong>National Restaurant Properties<\/strong> that <strong>Buns Burger and Fries<\/strong>, which has enjoyed over nine years of success on Columbia Street near the intersection with Franklin Street, is up for sale. <a rel=\"noreferrer noopener\" href=\"https:\/\/www.rdubrokers.com\/\" target=\"_blank\">Check out their website for details<\/a>.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>On a recent outing in Durham, noticed that a <strong>Tandoori Bites Indian Kitchen<\/strong> is moving into the <strong>Dickey&#8217;s BBQ<\/strong> spot in the <strong>New Hope Commons shopping center<\/strong> at 5311 New Hope Commons Drive. They also have a location in Wilmington. Sign is up and it looks like a lot is happening inside. The new owner is redecorating and said it\u2019s going to be a Thai restaurant soon. Thanks for the tip <strong>Julie<\/strong>!<\/li><\/ul>\n\n\n\n<p class=\"has-text-color has-vivid-red-color\"><strong>Food Trucks&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Got word from reader <strong>Stephen Head<\/strong> that there is a new food truck that has been sighted mostly in and around Chapel Hill called <strong>Mike\u2019s Vegan Hotdogs<\/strong>. Most of the time you can find them at 102 Merrill Mill Road near the intersection with W. This event takes place all over <strong>S&#8217;Morrisville<\/strong> with activities at four different sites. Go ahead and mark your calendars. <a rel=\"noreferrer noopener\" target=\"_blank\" href=\"https:\/\/www.downtownraleigh.org\/restaurant-week\/about\">Here is their website<\/a> which will be updated with additional details and participating restaurants as we get closer to the date.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Underground Kitchen<\/strong>, the popular Richmond, Va.-based experiential dinner series, returns to Raleigh<strong> August 24<\/strong> to debut its new food tour, <strong>&#8220;The New Americana.&#8221;<\/strong> Raleigh-based <strong>Lemar Farrington<\/strong> will be the featured chef for the evening. If you are not familiar with <strong>UGK<\/strong>, it is a one-night-only event, held at an undisclosed location (location is shared a few days before), featuring up-and-coming chefs and creative, multi-course dinners with wine pairings.
